No Lima Beans in Here…

Veggie Soup—Mine

The first time I made this someone asked where the lima beans were… Well, you ain’t gonna find them in my soup… Just ask my parents… I will go to any means to not eat those little creatures…

Soup, especially vegetable soup should consist of veggies you like anyway-- And the simpler the better. There is such thing as too much of a good thing. Pick a few of your favorite veggies.

Fresh or frozen—NO canned stuff unless it's home canned; well ok the tomatoes are a go.

And men, this doesn’t call for beer and hooters sauce. Yes, I did say favorite but if you are serving the ladies, come on.

So here we go:

Veggie Soup minus the Lima Beans
(Did I mention I don’t really measure?)

Lean ground turkey (hmmm guess it's not veggie soup any longer)
Beef broth – couple large containers
Diced tomatoes- several large cans
Rotele tomatoes – 2 cans
Red potatoes – diced
White shoe peg corn
Italian green beans
Mushrooms
Onion
Jalapeño pepper

Cook your meat and onions until brown – then throw it in a large pot to simmer with the rest of your ingredients for several hours or the day…
wow that was easy!!

I made this pot of soup today for my husband’s secretary at her request. We are kindred spirits in many ways. So here’s to you Kelli girl.

Sounds like a delish recipe! It's that pot-o-soup on the stove all day season up here. I just love going through the fridge, pantry and freezer to see what I can come up with and amazingly I've never made bad soup - even without measuring. No lima beans here either - just didn't grow up with them.

Actually the name of the soup is CRVS(Connie's Rockin Veggie Soup)
